ประวัติ

อาหารนี้มีพื้นฐานมาจาก พัฒนาขึ้นโดยกุนดาน ลัล คุชราล ชาวปัญจาบที่นับถือศาสนาฮินดู และเป็นผู้ก่อตั้งภัตตาคาร โมตี มาฮาล เดอลุกซ์ในเดลฮี ประเทศอินเดีย เมื่อราวทศวรรษ 2493 เป็นการปรุงไก่ในน้ำเกรวี่ทำจากมะเขือเทศ ใส่เนยและครีมมาก

การปรุง

หมักไก่กับส่วนผสมของครีม โยเกิร์ต และเครื่องเทศหลายชั่วโมง เครื่องเทศที่ใช้ได้แก่ มะละล่า ขิง กระเทียม เลมอนหรือมะนาว พริกไทย ผักชี ขมิ้น และพริก นำไปอบในเตาทันดูร์ หรือย่าง หรือทอด กินกับน้ำแกงที่ใส่เนย มีส่วนประกอบของซอสที่ต่างกันหลายอย่าง บางสูตรใส่กานพลู ผักชี อบเชย พริกไทย มหาหิงคุ์ ยี่หร่า และลูกซัด บางสูตรใส่เม็ดมะม่วงหิมพานต์บดเพื่อทำให้ข้น โรยหน้าด้วยเนย ครีม พริกเขียว ผักชี และลูกซัด
